On your Mac, in the app's sandboxed storage. If you enable sync, it mirrors through your own private iCloud account between your Macs. It never touches a PasteMyClip server, because there aren't any.
Content that password managers mark as concealed (1Password, Bitwarden, Apple Passwords, and anything following the standard) is never recorded. You can also pause capturing entirely from the shelf menu.
No — PasteMyClip is Mac-only, on purpose. Building and maintaining an iOS companion is a big part of why other clipboard managers charge yearly. If you need iPhone sync, Paste is genuinely good at that; you'll just pay $29.99 every year for it.
